    Deer Jerky

    anyone know a good seasoning and/or cure mix for it?
    time to try something a little new!

    Had some last year that was in Italian dressing. I liked it. Wasn't as spicy as I like it, but very good nonetheless.

    makin some now with light brown sugar, salt and pepper, seasoning salt, some liquid smoke, and jerky cure and seasoning (prepackaged spices, bought at payless)

    Go to Wal-Mart in the Sporting Good section and look for Eastman's Jerky seasoning. It comes in Original, Hickory, Peppered, Mestyke, and some other flavors. That is the only way to go.

    I have always used a little bit of this and a little bit of that....italian dressing, different spices, A1....marinate and cure....good stuff
    I was married by a judge. I should have asked for a jury.

    This might sound stupid, so bear with me. Can you get jerky by just cooking the meet in a broiler (lower temp) for a longer period of time? I swear somebody told me that that's how they made their jerky. Could be the CRS coming through, though. I knew a Filipino guy in the 82nd who doctored his up with all the spices from his homeland. Surprisingly, it wasn't as overpowering as I had expected.

    Not the broiler, but you can make it in the oven. Use baker's cooking racks (you can get them at Wal Mart, just looks like a wire rack) to ensure even air flow. Temperature doesn't need to be much above 150*.

    You can also make jerky using household vent filters (like for a heat pump) and a box fan. At least Alton Brown did.

    The key is to cure/brine and dry the meat.
